Creole Ratatouille Recipe

Spicy creole ratatouille

Ingredients
3 small eggplant
4 medium tomatoes
4 small zucchini
1 large onion
1 tbsp cajun seasoning
2 small yellow squash
1/2 tbsp extra virgin olive oil
1 red bell pepper
4 cloves garlic
1/4 cup gin
Directions
  1. Cook onions and garlic - cover each time and let cook for 2 minutes

  2. Add bell pepper

  3. Add eggplant

  4. Add zucchini and squash

  5. Add tomatoes and seasoning

  6. Add 1/2 cup of wine (or gin)

  7. Let whole dish simmer uncovered for 20 minutes

  8. Add hot sauce, salt, pepper to taste
