Spicy creole ratatouille
| 3 | small eggplant |
| 4 | medium tomatoes |
| 4 | small zucchini |
| 1 | large onion |
| 1 | tbsp cajun seasoning |
| 2 | small yellow squash |
| 1/2 | tbsp extra virgin olive oil |
| 1 | red bell pepper |
| 4 | cloves garlic |
| 1/4 | cup gin |
- Cook onions and garlic - cover each time and let cook for 2 minutes
- Add bell pepper
- Add eggplant
- Add zucchini and squash
- Add tomatoes and seasoning
- Add 1/2 cup of wine (or gin)
- Let whole dish simmer uncovered for 20 minutes
- Add hot sauce, salt, pepper to taste
