High Fibre Muffins with nutty taste.

Ingredients

eggs |
| 1/2 |
c brown sugar |
| 1/3 |
c sunflower oil |
| 1 1/2 |
c buckwheat flour |
| 1 |
tsp baking powder |
| 1/4 |
tsp baking soda |
| 1/2 |
c chocolate chips |
| 1 |
c shredded carrots |
| 1/3 |
c skim milk |
| 1/4 |
c pecans |
Directions
- Blend eggs, brown sugar and oil together.
- Mix buckwheat flour, baking powder and soda
- and cinnamon together. Add to oil mixture, fold gently just till blended.
- Add shredded carrots and chocolate chips (lightly coated with buckwheat flour) to above mixture, just mixed lightly with flour mixture with the skim milk.
- Topped with Pecans.
- Bake at 350 for 20-25 minutes.
