Buckwheat muffin

Makes 10 servings

High Fibre Muffins with nutty taste.

Ingredients
2 eggs
1/2 c brown sugar
1/3 c sunflower oil
1 1/2 c buckwheat flour
1 tsp baking powder
1/4 tsp baking soda
1/2 c chocolate chips
1 c shredded carrots
1/3 c skim milk
1/4 c pecans
Directions
  1. Blend eggs, brown sugar and oil together.

  2. Mix buckwheat flour, baking powder and soda

  3. and cinnamon together. Add to oil mixture, fold gently just till blended.

  4. Add shredded carrots and chocolate chips (lightly coated with buckwheat flour) to above mixture, just mixed lightly with flour mixture with the skim milk.

  5. Topped with Pecans.

  6. Bake at 350 for 20-25 minutes.
