Brown Rice Salad Recipe

yummy served with your falafals or kebabs

Ingredients
8 ounces Brown Rice
4 ounces Sweet corn, cooked
4 ounces Frozen Peas, cooked
2 stalks Celery
1 medium onion, finely chopped
2 tablespoons sunflower oil
1 1/2 tablespoon Lemon juice
1 teaspoon Mustard
3 1/2 ounces red pepper
240 grams canned chick peas, drained weight
1 Salt and Pepper, season to taste
Directions
Cook rice, while rice is cooking finely chop the Onion and Celery, when rice has cooked add the Sweet corn, Peas, Onion and Celery mix together well. Make a French dressing with the oil, Lemon juice and mustard season to taste and mix into the still warm Salad. Leave to infuse and chill in fridge for at least six hours.
