White Chicken Chili

Makes 6 servings

from can label of Bush's Great Northern beans- great made with grilled chicken breasts

Ingredients
1 tablespoon olive oil
1 cup onion, finely chopped
4 oz. green chilies, chopped
3 tablespoons flour
2 teaspoons ground cumin
31 3/5 ounces navy beans
14 1/2 ounces chicken broth
1 1/2 cup chicken breast, cooked and finely chopped
Directions
  1. In large skillet or dutch oven, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin. Cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat- simmer for 10 minutes or until thickened. Add chicken, cook until hot. Garnish with monterey jack cheese, sour cream, and salsa, if desired. (Garnishes not added in analysis of the recipe)
