| 2 | pounds part-skim ricotta cheese |
| 1/2 | cup granulated sugar |
| 1/3 | cup all-purpose flour |
| 5 | eggs |
| 4 | tsp fresh lemon zest (2 lemons) |
| 1 | tsp. vanilla extract |
| 1/8 | tsp. salt |
- Preheat oven to 320. Set rack in the middle of the oven.
- Butter and flour a 9-1/2 inch springform pan and tap out excess flour.
- Place the ricotta in a large mixing bowl and beat it until smooth. Beat in sugar and flour. Beat in the eggs one at a time. Blend in the lemon zest, vanilla, and salt.
- Pour batter into the prepared pan. Bake in the oven for about 1 hour to 1 hour 15 minutes or until a light golden color and set in the center.
- Cool on a wire rack. It will sink slightly as it cools. Cover and chill. To serve, cut into slices. Top with fresh or frozen berry sauce (berries and a little honey). Or try glazing the top with marmalade.
