Wonderful slow-cooker meal that makes a lot of food. Great with white rice!
| 4 | lb chicken |
| 1/2 | c onion, chopped |
| 2 | T butter |
| 3/4 | cup lemon juice |
| 1 | T fresh parsley |
| 2 | t lemon peel, grated |
| 1/4 | t salt |
| 1/2 | t dried thyme |
- Rinse and pat dry chicken.
- Remove any excess fat.
- Fill the cavity with onion and rub the outside with butter.
- Place chicken in crockpot, trying not to spill onion.
- Squeeze lemon juice all over it and sprinkle remaining ingredients.
- Cook on low for 6-8 hours (or 3-4 hours on high, but the meat may not be as tender).
