Crock Pot Lemon Chicken Recipe

Wonderful slow-cooker meal that makes a lot of food. Great with white rice!

Ingredients
4 lb chicken
1/2 c onion, chopped
2 T butter
3/4 cup lemon juice
1 T fresh parsley
2 t lemon peel, grated
1/4 t salt
1/2 t dried thyme
Directions
  1. Rinse and pat dry chicken.

  2. Remove any excess fat.

  3. Fill the cavity with onion and rub the outside with butter.

  4. Place chicken in crockpot, trying not to spill onion.

  5. Squeeze lemon juice all over it and sprinkle remaining ingredients.

  6. Cook on low for 6-8 hours (or 3-4 hours on high, but the meat may not be as tender).
