| 1 | sweet potato |
| 1 | oz mozzarella cheese |
| 1/8 | cup fat free cottage cheese |
| 1 | tbsp skim milk ricotta cheese |
| 2 | tbsp green pepper, diced |
| 1/2 | tsp paprika |
- poke holes in potatoes with fork and cook in microwave for 6 min or until done
- when cool, cut in half and scoop out insides into a bowl
- mash potatoes with cheese and salt and pepper to taste
- put mixture back into potato skins and top with paprika and green pepper
- microwave again for a minute or two and enjoy
