For the slow cooker. Great rainy day comfort food. I found the sauce pretty thin, so I tossed in a couple of spoonfuls of flour at the end, and it thickened up nicely.
| 1 3/4 | lbs chicken thigh meat |
| 3 | medium onions, quartered |
| 2 | carrots, sliced |
| 1 1/2 | (1 lb) potatoes, cubed |
| 28 | ounces chicken stock |
| 1 | tsp celery seed |
| 1 | tsp dried thyme leaves |
| 14 | oz baby corn |
| 1 | cup peas, frozen |
- Add chicken, onions, carrots, potatoes and broth to slow cooker.
- Stir in celery seed, thyme and corn.
- Cover and cook on LOW for 7 - 9 hours, or HIGH for 4 - 6 hours. Stir in peas and cook until done (15 - 30 minutes).
