Rustic Chicken Stew Recipe

For the slow cooker. Great rainy day comfort food. I found the sauce pretty thin, so I tossed in a couple of spoonfuls of flour at the end, and it thickened up nicely.

Ingredients
1 3/4 lbs chicken thigh meat
3 medium onions, quartered
2 carrots, sliced
1 1/2 (1 lb) potatoes, cubed
28 ounces chicken stock
1 tsp celery seed
1 tsp dried thyme leaves
14 oz baby corn
1 cup peas, frozen
Directions
  1. Add chicken, onions, carrots, potatoes and broth to slow cooker.

  2. Stir in celery seed, thyme and corn.

  3. Cover and cook on LOW for 7 - 9 hours, or HIGH for 4 - 6 hours. Stir in peas and cook until done (15 - 30 minutes).
