Beef Enchiladas - Easy Recipe

Easy beef and cheese enchiladas

Ingredients
10 1/2 oz cream of mushroom soup
10 1/2 oz enchilada sauce or red sauce
1 cup skim milk
1 lb. ground beef, browned
16 oz grated sharp cheddar cheese
18 flour tortillas
1 tbsp fat free sour cream
Directions
  1. Brown ground beef

  2. Drain grease

  3. Add soup, red sauce, and milk

  4. Allow to boil

  5. Warm tortillas. Usually about 12 seconds for 5-6 at a time

  6. Place a handful of cheese in tortilla and roll up with seam side resting on plate

  7. Top with sauce

  8. Microwave for about 15 seconds to melt cheese

  9. Top with sour cream, optional
