Eggless egg salad

Makes 2 servings

Adapted from a bunch of different recipes. Add chopped celery for some crunch.

Ingredients
8 oz firm tofu
3 tbsp vegenaise
1 tbsp mustard
1/2 tsp turmeric
1/2 tsp garlic powder
1/2 tsp onion powder
1 pickle
2 tsp lemon juice
Directions
  1. Crumble tofu into bowl.

  2. Chop pickle into small pieces.

  3. Mix all ingredients.

  4. Spread on toast, eat straight from the bowl, or enjoy as you would otherwise use egg salad.
