Chicken Enchilladas Recipe

Very filling burrito style dish

Ingredients
6 flour tortillas
1 lb. cooked chicken breast
1 red pepper
1 yellow pepper
1 green pepper
1 roma tomato
1/2 cup non-fat sour cream
1/2 cup mild salsa
1/2 cup aged cheddar cheese
Directions
  1. Preheat oven to 350 F. Cube and cook chicken in skillet. Chop and add peppers. cook together until veggies are soft. Add sourcream and chopped tomato.

  2. Spoon into 6 tortillas in even amounts. Wrap burrito style and place side by side in 9 x 13 pan. Cover with salsa and cheese.

  3. Bake for 15-20 minutes. Let stand for 5 minutes. Serve 1 enchillada per. Enjoy!
