Very filling burrito style dish
| 6 | flour tortillas |
| 1 | lb. cooked chicken breast |
| 1 | red pepper |
| 1 | yellow pepper |
| 1 | green pepper |
| 1 | roma tomato |
| 1/2 | cup non-fat sour cream |
| 1/2 | cup mild salsa |
| 1/2 | cup aged cheddar cheese |
- Preheat oven to 350 F. Cube and cook chicken in skillet. Chop and add peppers. cook together until veggies are soft. Add sourcream and chopped tomato.
- Spoon into 6 tortillas in even amounts. Wrap burrito style and place side by side in 9 x 13 pan. Cover with salsa and cheese.
- Bake for 15-20 minutes. Let stand for 5 minutes. Serve 1 enchillada per. Enjoy!
