A deliciously low calorie dessert, which just happens to be yummy!
| 2 | cups raspberries, or blueberries, fresh or frozen |
| 3 | tsp caster sugar |
| 3 | egg whites |
| 1 | tbsp cornflour |
- Puree 1 cup of the berries and add the sugar to taste (I was a bit liberal in the recipe, trying to be honest calorie-wise). Divide the remaining berries between ramekins or souffle dishes.
- In a separate bowl, beat the eggwhites until stiff. Add cornflour and beat for a minute further. Fold gently through the puree and spoon into the dishes.
- Bake in a hot oven at 200 degrees for 10-15 min or until puffed and golden. Serve immediately.
