Very Berry Souffle Recipe

Makes 4 servings


A deliciously low calorie dessert, which just happens to be yummy!

Ingredients
2 cups raspberries, or blueberries, fresh or frozen
3 tsp caster sugar
3 egg whites
1 tbsp cornflour
Directions
  1. Puree 1 cup of the berries and add the sugar to taste (I was a bit liberal in the recipe, trying to be honest calorie-wise). Divide the remaining berries between ramekins or souffle dishes.

  2. In a separate bowl, beat the eggwhites until stiff. Add cornflour and beat for a minute further. Fold gently through the puree and spoon into the dishes.

  3. Bake in a hot oven at 200 degrees for 10-15 min or until puffed and golden. Serve immediately.
