Adapted from a slow cooker cookbook, using what I had on hand at the time. Hearty and filling, and around 100 calories per serving.

Ingredients

tsp olive oil |
| 40 |
oz chicken broth |
| 1 |
lb potatoes, diced |
| 60 |
g turkey bacon, diced |
| 1 |
carrot |
| 1 |
onion |
| 3 |
cloves garlic |
| 682 |
ml corn |
| 1/2 |
cup frozen peas |
| 1/2 |
chicken breast, diced |
Directions
- Heat olive oil in pot. Sautee onion, garlic and turkey bacon until soft and fragrant, 5 - 8 minutes.
- Add broth, potatoes and carrot. Bring to boil, then simmer until the vegetables are soft. Roughly mash potatoes until soup is chunky-creamy (or whatever your preference is).
- Add corn, frozen peas and diced chicken. Warm through and serve.
