Trimmed this down a bit as I don't like chilis!
| 2 | cloves minced garlic |
| 1 | tbsp olive oil |
| 1 | tsp powdered cumin |
| 1/2 | tsp dried oregano |
| 1/8 | tsp cayenne pepper |
| 1/2 | tsp salt |
| 1 1/2 | cups chicken broth |
| 2/3 | cup kidney beans |
| 8 | oz chicken breast |
| 1/2 | cup chedder cheese |
Saute garlic in olive oil in soup pot till tender. Add cumin, oregano, cayenne pepper, and salt, and saute another minute. Stir in chicken broth, beans, and chicken. Bring to a boil. Cover and simmer for 25 minutes. Stir in cheese and serve.Categories
