Lots of veggies spice up your chicken!
| 1 | lb Skinless Chicken Breast |
| 1 | Green Pepper, cut in strips |
| 1 | Red Pepper, cut in strips |
| 1/4 | Onion, cut in strips |
| 1 | medium Zucchini, cut in strips |
| 1 | large carrot, cut into strips |
| 1/2 | tsp dried Oregano |
| 1 | (14oz) Stewed Tomatoes, Italian Recipe |
| 1/2 | cup of black olives, sliced |
| 1/2 | tbs Olive oil |
| 1 | tsp salt |
| 1 | tsp black pepper |
- Flatten chicken breats with meat hammer (about 1/2" thick).
- Dust chicken with salt, pepper, and oregano.
- Heat a large frying pan up over Medium-high heat.
- Add oil; cook chicken until lightly browned on both sides (about 3mins per side)
- Remove chicken from pan
- Add bell peppers, carrot, zucchini, tomatoes, olives, and onion to pan. Cook, covered, for 3mins.
- Return chicken to pan, and cook, uncovered, until veggies and chicken are tender (at least 5mins).
- serve with pasta or by itself!
