High-Fibre Muesli Bars Gi Jane Recipe

A high-fibre, Low-GI snack

Ingredients
165 g wholewheat flour
2 tsp baking powder
70 g brown sugar
7 g oat bran
1 tsp cinnamon
1 tsp allspice
1/2 tsp ginger
1/2 tsp salt
135 g oats
140 g dried apricots, chopped finely
70 g almonds, sliced
175 ml apple puree, unsweetened
115 ml apple juice, unsweetened
3 eggs
2 tsp oil
Directions
  1. Line a shallow 8" x 12" tin with baking parchment

  2. Mix flour, sugar, baking powder, bran and spices in a large bowl. Stir in the oats, dried apricots and almonds

  3. Mix the apple sauce, apple juice, eggs and oil and add to the flour mixture. Pour into the baking tray and spread evenly

  4. Bake at 200C/Gas 6 for 15 - 20 minutes or until slightly browned. Let cool and cut into bars
