| 1 | tbsp extra virgin olive oil |
| 100 | g chicken breast |
| 2 | small onions, diced |
| 3 | cloves garlic, diced |
| 1 | tsp paprika |
| 1/4 | tsp kosher salt |
| 15 | ounce diced tomatoes |
| 1/2 | cup red wine vinegar |
| 2 | cups bell peppers |
| 1 | tsp red pepper flakes |
- Brown onions and garlic in olive oil.
- Add chicken and brown both sides.
- Add remaining ingredients and allow to simmer until chicken is cooked through and peppers are tender.
