Chicken with Tomatoes and Peppers Recipe

Chicken with a mediterranean flare

Ingredients
1 tbsp extra virgin olive oil
100 g chicken breast
2 small onions, diced
3 cloves garlic, diced
1 tsp paprika
1/4 tsp kosher salt
15 ounce diced tomatoes
1/2 cup red wine vinegar
2 cups bell peppers
1 tsp red pepper flakes
Directions
  1. Brown onions and garlic in olive oil.

  2. Add chicken and brown both sides.

  3. Add remaining ingredients and allow to simmer until chicken is cooked through and peppers are tender.
