Irish Soda Muffins Recipe

Makes 12 servings


irish soda bread in muffin form sub'd sour cream for buttermilk (didn't have any on hand, and an absence of lemon juice/vinegar) if using buttermilk, take out the milk

Ingredients
2 cups all-purpose flour
3 tbs granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup butter
1 cup sour cream
1/4 cup skim milk
1 large egg
Directions
  1. preheat oven to 375

  2. combine dry ingredients

  3. with a pastry cutter/pair of knives, cut the butter into the dry ingredients until it resembles coarse crumbs

  4. mix egg, milk and sour cream

  5. mix sour cream mixture and flour butter mixture together, once combined, place batter in 12 muffin tin things

  6. bake at 375 until tasty (about 20 minutes) and pokey stick come clean
