irish soda bread in muffin form sub'd sour cream for buttermilk (didn't have any on hand, and an absence of lemon juice/vinegar) if using buttermilk, take out the milk
| 2 | cups all-purpose flour |
| 3 | tbs granulated sugar |
| 1 1/2 | tsp baking powder |
| 1/2 | tsp baking soda |
| 1/2 | tsp salt |
| 1/4 | cup butter |
| 1 | cup sour cream |
| 1/4 | cup skim milk |
| 1 | large egg |
- preheat oven to 375
- combine dry ingredients
- with a pastry cutter/pair of knives, cut the butter into the dry ingredients until it resembles coarse crumbs
- mix egg, milk and sour cream
- mix sour cream mixture and flour butter mixture together, once combined, place batter in 12 muffin tin things
- bake at 375 until tasty (about 20 minutes) and pokey stick come clean
