the Best Pumpkin Muffins (vegan)

Makes 12 servings

recipe out of Vegan with a Vengence by Isa Chandra Moskowitz

Ingredients
1 3/4 cups all purpose flour
1 1/4 cups sugar
1 tbsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp allspice
1/8 tsp ground cloves
1 cup pumpkin
1/2 cup soy milk
1/2 cup vegetable oil
2 tbsp molasses
Directions
  1. Dry mix: flour, sugar, baking powder, salt, spices

  2. Wet mix: pumpkin, soy milk, oil, molasses

  3. Mix wet into dry, scoop into 12 muffin tins and bake for 18-20 minutes at 400 degrees.
