Yummy with philadelphia soft cheese and smoked salmon

Ingredients

Directions
- (Breadmaker recipe)Put all but the last three ingredients in a bred tin in the order suggested in the instructions. Set for wholemeal bread dough stage. press start.
- When the dough is ready, remove from the bread machine and punch down. Cut into 10 equal pieces. Roll each piece between your palms to form a thin rope, about 20cm/8 in long with tapered ends. Bring ends together to form a circle, with tapered ends overlapping. With moistened fingers, pinch or lightly knead the joined ends so the circle is securely fastened.
- Set the bagels in a warm place to rise and cover them loosely. They should prove for 15 minutes. Pre heat the oven to gas mark 6. While they are proving, bring about 4 pints of water to boil in a saucepan.
- Add the 1 tablespoon sugar. When the bagels have risen for 15 minutes, drop one or two at a time into the boiling water, handling them gently as possible so they dont deflate. They will rise to the surface of the water and swell up. Cook for 1 minute, then turn them over and let them cook 3 minutes longer.
- Remove the bagels, drain over the water, and place on an ungreased baking sheet. pour the milk into a cup and brush the bagels with the milk and sprinkle poppy seads on one half of the bagels and sesame seeds on the other. Bake until golden for about 20-25 minutes.
