I heard this at Weight Watchers. Delicious cake idea. If you don't want to eat all the fatty, doughy cakes out there, try this light recipe and people will be licking their fingers off!

Take a prepackaged cake mix (from any grocery store, Betty Crocker, etc) and instead of using the ingredients listed on the back like eggs or oil, mix it with a can of diet coke. Works best with a chocolate or fudge mix. For whiter mixes like lemon powder or vanilla, mix in a can of diet 7up. Yum!

Does anyone know if you can make a Jello Poke Cake out of this? That's one of my favorite summer deserts and it would be great to have it.

I had to look up poke cake after seeing your post, Linda. I decided to make one tonight with SF Jello, I just put it in the fridge and I will find out tomorrow if it works or not. I'll let you know. :)

Great Parre - can't wait to hear. I hope it's great and that you like it. I went ahead today and made a regular one with dark chocolate fudge cake because that's all I had on hand. It was great - almost like fudgy brownies, but I really wanted a cool, poke cake. I usually make one for the 4th of July with red or blue jello and put strawberries and blueberries on top. Hoping for good results!

Okay I have no idea what poke cake is actually supposed to taste like. The cake is delicious, though. If there are supposed to be actual pockets of Jello in it I don't think there are but it's still really good, and quite dense actually! All I can say is try it, if it's not the poke cake you are used to you will still enjoy it. :)

The whole idea of poke cake is, the jello spreads out into the cake, giving it an interesting texture and fruity flavor.  The cake soaks it up like a sponge.

OMG I LOVE DIET COKE CAKE!!!
i just made german chocolate cake cupcakes and i had FIVE and now i feel FULL .. okay so it's like 550 calories or something along those lines =S BUT i worked out like crazy today anddd that's probably the amount in a slice of wickedly amazing choclate cheesecake haha .. =P

what is the proportion for the coke to the other ingredients?

how do you know how much coke to put in the cake? im totally trying it!!!!!!!!!!

To a Duncan Hines chocolate fudge cake mix I added one whole can of Diet Coke. Nothing else. It came out very fudgy and good.

I just tried mixing in diet Coke with Duncan Hines red velvet cake mix. It tasted pretty good, but it's crumbling everywhere and doesn't want to stay together. I couldn't even ice the sides of it as it would come apart on contact.
Does anybody have an explanations/suggestions?

This doesn't help the situation with your red velvet cake, but just FYI. I kept my DH fudge cake in the pan and didn't frost it, but while it was very fudgy, each piece wanted to fall apart when I took it out of the pan. I think next time I'll add some egg white and see if that helps.

I know this has been asked, but i just want to be sure.
Where I live, diet sodas are made with aspartame and asesulfame. We don't have sodas with sucralose.
Is it safe to use them?

I tried a new experiment with the same principle...
2 packages if Corn bread mix with 12 oz can of diet Sierra Mist.  Bake at 400 dgrees until slightly bown... great, a little crumbly... but tasty

No one in my office knew it was made with diet soda.

well, I know you shouldn't use asparatame in cooking because the heat does something to it, but I'm not well informed.

Since the cake mix already has a lot of sugar in it, I've never seen the point of adding more sweetness with diet soda.  I bet it would work just fine with club soda.

Maria, the Diet Coke I used in my DH fudge cake had aspartame in it. I don't see asesulfame in the ingredients list. It came out very fudge and was good.

Amanda, in the above fudge cake each serving had 180 calories x 12 servings per box = 2160 for the whole cake. I have another mix that is 170 per serving so it does vary a bit.
