Zucchini from a friend's garden, salad (lettuce/veggie mix), carrots, celery.  Do home-made baked onion rings made out of sweet onion count as a veggie?  Yep...I'm gonna count it!

Welcome back MOLLY! It's SO nice to hear your hubby is home. I bet he is really happy to be home as you are to have him home.

digigirl - I'll be happy to let you know what works with my arms as soon as something works. Wink Seriously, I do think they are a bit toner since I've been working out with weights. I walk with 2 lbs weights and do tricep workouts while walking. I look kinda silly but I don't care.

Mrsblackhawk - I'd love to know how you make oven baked onion rings. Can you share with us your recipe?

QOD - I'm going to have to say zucchini. I like to sprinkle it with lemon pepper and then grill it in my cast iron skillet with a tiny bit of olive oil. Yum! Also some asparagus that is steamed. But I like to season it with lemon pepper, too.

Southernmidwife, I'm envious about the arms.  My arms don't seem to get better no matter what I do.  It's one of my biggest peeves because I can fit into so much more now, but I still have to find shirts with longish sleeves.  The spring and summer clothes have been really tough because everything is sleeveless.  I've thought about surgery, but decided that is out of the question, so I will have to learn to live with them. 

QOD: Today I plan to eat green beans and lettuce from my garden.

What fresh veggies do you plan to eat in the next 24 hours?

The only fresh veggies I've eaten so far today was the lettuce in my wrap.  I'm not sure what I want for dinner, but a vegetable stir fry sounds nice.  I can't guarantee it was fresh though!

I've been having difficulties getting the fruits and veggies in, because the campus food right now is all fast food.  I'm eating a fruit cup this afternoon for a snack, but that's all I'm having in succession.

I worked out today :-).  Those of you who are wondering about toning arms, my personal trainer put me on "supersets" and "trisets" to tone throughout my whole body.  This is what I do on work-out days.
  1. 10 minutes of warmup - treadmill at 3.3 mph.
  2. 3 supersets - 12 each of chest press (40 lb) and seated row (40 lb), three times.
  3. 3 supersets - 12 each of seated leg curl (50 lb) and seated leg press (80 lb)
  4. 3 trisets of this pull down thing that works biceps and triceps, at 30 lb - don't know the name of it.
  5. 10 minutes of stretching.
  6. 10 more minutes of cooldown - outdoors or on track at relaxed pace.
EDIT:  This coming week he's going to teach me a few core exercises as well, but reminds me countlessly that there's no such thing as "spot" reduction or "spot" toning.

I've already had spinach today.  When I get back from my walk, I'll have some broccoli with lunch.  Sometime in the afternoon, I'll have some sugar snap peas, baby carrots, and cherry tomatoes as a snack.  I have some zucchini and summer squash I need to use, so those will probably go in with dinner.

It is SO easy!  You get a big sweet onion, like Walla Walla or Vidalia, slice it into rings, dip in egg whites/better than egg, dip in bread crumbs (I used progresso) and bake for about 20 minutes at 350.  The onions are sweet and flavorful and you get some crunch from the bread crumbs.  I think the worst part of the whole thing are the bread crumbs (at 110 or 120 calories per quarter cup)

I had a salad for lunch and for dinner I will be having grilled corn on the cob,  broccoli and a side salad for my veggies today.

I have the Hungry Girl cookbook and there is an awesome recipe for what she calls 'Lord of the Onion Rings' using Fiber One cereal. For the entire recipe it has 153 calories, 1g fat, 379mg sodium, 41g carbs, 16g fiber, 7g sugars & 9g protein.  Go to hungry-girl.com and you should be able to find this and many other recipes or you can find the book at Wal-mart.  There are many recipes in her book using Fiber One cereal.

I am happy to report that I have gotten back down below 230 again this week, only this time not just by 1 pound but by 2!

I'm sad to say no veggies today. That's unusual for me, but it happened. Frown

I'm gonna have to get that cookbook! I love Fiberone cereal too!

I had a good day with eating within my calorie limits, went to the gym and rode the bike for 7.5 miles and worked on the machines for a while.

Stayed away from the cookies hubby bought this morning "just for me" (he said). I'm giving those things away to the neighbor kids tomorrow if they are out! And tell him I ate them! hehehe I know, very sneaky! But he was so mad when I said I wasn't gonna eat them. He gave me a look like "I bought these for you and you can't appreciate it" kinda look. GEEZE!!!!  He coulda bought me some fruit. THAT I'd appreciate.

What are some of your "happy" moments?

When I found that my size 22 jeans fit loosely (I wore a very tight size 26 when I started). Seeing the scale read less than 250 consistently (25 lb loss). And the best "happy" moment lately was when I mowed our front yard (very steep hillside) in 30 minutes without stopping and wasn't completely out of breath. It used to take me close to an hour because I'd have to stop to rest every 5-10 minutes!

I think the only fresh veggies I've had lately are zucchini and green peppers. Tonight however I'm going to have a stir fry of zucchini, green peppers and cabbage all fresh out of my garden.  I tend to only eat the fresh veggies that I've grown in my garden other than that I tend to stick to frozen.

Ice cream! But when I'm being really good a fruit & yogurt smoothie. I mix 1/2c fat free lite vanilla yogurt  with 1-2 c partially thawed frozen berries (usually strawberries), a peach (or other fresh fruit) and a little milk if it's too thick.  It ends up thick like a milkshake except with a lot less calories and a lot more nutrition.

QOD: I'll have to second the ice cream or frozen yogurt if I'm trying to be a bit more reasonable. I also really like to put some frozen fruit in the blender with yogurt and a splash of milk for a breakfast. 

For the past 2 days I've really been eating well over my calorie limit.  Yesterday I made banana nut muffins to deal with some older bananas and nfortunately I ended up eating 3 of them.  I was going to try to call it a day, but then decided to half of PB and J sandwhich and a fiber one bar.  The day before it was 4 pop tarts.  I don't normally have pop tarts in the house, but I run a summer program for youth and had them in my car.  I hate when I do stuff like this.  I'm hoping I get a better handle on the eating today.

Mmmmm....ice cream, hands down!  And I adore the mochi from Trader Joe's.  But, given the current calorie counting situation, I'm loving the sugar free popsicles.  I need to go to the store tonight, so I'm going to go for some variety and try some of the low fat/low cal fudgesicles.

I totally ate maintenance yesterday.  I'm trying to pretend I did it on purpose, but I really didn't.  The burrito called and I answered.  Oh, well.  Today's another day.  

Let's see, frozen treats.  When I have calories to spare, I really like the Skinny Cow Cookies and Cream Ice Cream Sandwiches.  When I want something lighter, I like things made of frozen fruit.  Frozen mango slices are one of my favorites.  I also like to make a little extra when I make a smoothie and freeze it into popsicle molds.  Sometimes I just puree frozen strawberries and peaches with some unsweetened almond milk.

I am hooked on the skinny cow fudge pops!  They are so good that even my kids are eating them!  Before calorie counting, my favorite was a Reeses peanut butter cup blizzard from Dairy Queen!  I have splurged on a small one a couple of times. Innocent

I love frozen blueberries!

My day was nice. But I do have an appetite. I think I already spent my calories for the day. No snack for me tonight.Frown

Also, did anyone else have problems posting to the website this afternoon? I think the site wasn't working for a while.

OMGosh!!! I had an awful time! I went thru cc withdrawals and actually left the house and went to the mall for a smoothie! lol I was so mad I couldn't write my "friends" back! lol

I have always thought of buying blueberries, but I don't know what to do with them! :D

The best thing to do with frozen blueberries is to add them to your cereal!
