Diet Coke Cake
I heard this at Weight Watchers. Delicious cake idea. If you don't want to eat all the fatty, doughy cakes out there, try this light recipe and people will be licking their fingers off!
Take a prepackaged cake mix (from any grocery store, Betty Crocker, etc) and instead of using the ingredients listed on the back like eggs or oil, mix it with a can of diet coke. Works best with a chocolate or fudge mix. For whiter mixes like lemon powder or vanilla, mix in a can of diet 7up. Yum!

For the topping, I used fat-free cool whip with fat-free dry vanilla pudding. My daughter couldn't keep away from it!

Meh , it sounds good, but ive been trying to completely elimate diet soda and fake sweetners from my diet. For me, a real cake with all the fat is alot better than anything with artifical sweetners. the lesser of the two evils...
Then you have to try this cake!
Spiced Pumpkin Cake
1 box of Spice Cake Mix
1-14 oz can of Pure Pumpkin
1/2 c. water
Mix all ingredients. Spray pan and bake as directed on box (may bake quicker than listed on box.)

Okay, this sounded so good that I had to try it with the cupcakes. Now, I don't usually have a problem with cupcakes "sticking" but these stuck to the paper cups. For those of you that made cupcakes with this, did you just use the muffin tins or did you use paper cups too? Did yours stick? I would like to try them again but not if the sticking is "normal". Did I do something wrong?
I used the foil cupcake liners instead of the paper ones, and I didn't have a problem with sticking.

You can also spray paper liners with Pam. I do that when I make muffins.
Thank you, I don't normally do that so I wasn't aware. However, even though they stuck, the cupcakes were a huge hit. They really enjoyed the "frosting" I made with the ff cool whip an sf pudding mix.

Hi everyone! I'm new here and LOVE this site!!!! I was dreading having to bake a cake for my son's birthday because it's sooo tempting but this thread has made it all better! :-) I'm going to bake brownies so it's easier to be good. :-)
If I use fat free cool whip and ff pudding mix.. do you know about how many calories that would be per cupcake? For 24 and for 18 as I'm not sure how many it will make. Please help - I'm cooking these tomorrow night. :-)

The best you can do with the calorie count is to figure the calories for the entire batch, then divide by the number of cupcakes.

I have tried the cheesecake flavored ff/sf pudding and it's very good. I sometimes mix it with non-fat plain yogurt and it really tastes like cheesecake. (The dry mix with a quart of yogurt, no liquid).

I've never tried it with a quickbread mix like that. Have no idea if it would work.
another way to keep the calories down and sugar content is to use sugar free cool whip in place of the ff cool whip - it's good and you don't even knoe it's sugar free
