I heard this at Weight Watchers. Delicious cake idea. If you don't want to eat all the fatty, doughy cakes out there, try this light recipe and people will be licking their fingers off!

Take a prepackaged cake mix (from any grocery store, Betty Crocker, etc) and instead of using the ingredients listed on the back like eggs or oil, mix it with a can of diet coke. Works best with a chocolate or fudge mix. For whiter mixes like lemon powder or vanilla, mix in a can of diet 7up. Yum!

A comment on the pudding icing post-

I mix coolwhip and dry chocolate pudding to make a really good, light and fluffy icing

I don't know about other flavors though...my aunt says they taste good but I rarely eat cake so when I do I always make chocolate frosting <3 
Icing...you can take a tub of cool whip and mix with dry vanila instant pudding (fat free for both)   makes a great icing

so many combos to the cake mix thing...

diet root beer...with french vanilla or chocolate

cherry vanila pepsi with french vanilla...

raspberry diet (diet rite soda's are good to use too) with lemon

Diet Rite soda's add a ton more varieties...work just as well ...you do have to measure them out though to a regular can of soda amount.
for anybody who knows what cheerwine is (that is a southern thing, I am pretty sure), I bet that Diet cheerwine would be good in a white cake mix....just a thought though.
Tried this on the weekend.  Oh my gosh it made the end product so light and lovely!  I made it in muffin tins, so I could ration it easily.  It came out to only about 75 cals per little cake!  That's less than a chocolate digestive and so much yummier!  Thanks for the tip.

can you use the coke idea for blueberry muffins?? long shot what kinda diet soda would taste good with that? if any?
Oh sure! Get a white cake mix, 7 up or Sprite. Throw in the blueberries. It will be more cupcake like.

how do you log it on your calorie log??  and if i made 24 cupcakes and the package says "180 for 1/12 of the mix" do i divide that 180 in half....???? sine i'm not have 1/12 i'm having 1/24???
the cake was SO good!

i made the frosting too with chocolate fudge sugar free pudding and Cool whip free & then topped it with fresh cut strawberries!

I made it as well and brought it to work.  No one can believe it.  I also mixed up fat free cool whip and sugar free white chocolate pudding mix for icing!  They were awesome and SO each!
i saw somewhere that you could do this in the microwave? am i dreaming?  if so, can i get the info.  cake sound So good after reading all those posts and i have diet cream soda and pineapple cake in the house right as we speak.... but the oven heats the hell out of the house and its supposed to be very hot today...

i must be crazy - i just pre-heated my oven to bake diet coke brownies on a 90 degree day
okay, i don't know what i did wrong, but they didn't cook right. the top looked beautiful, and I was dying waiting for them to cool down. but when I went to cut them, I realized that the bottom half was a weird pudding-like consistency.  So, I stuck it back in the oven for an extra HALF HOUR, and it never fully cooked. 

All I did is add 12 oz of diet coke to a brownie mix, mixed them together, and stuck it in the oven. did I miss a step somewhere??
I have only made cupcakes and cake with this idea.  I don't know if brownies work?  I have never heard of anyone using brownie mix, only cake mixes!

Maybe that is the problem.  Try it with a pudding heavy cake mix---they stay moist for a week--and taste amazing!

I put light coolwhip on them for frosting! MMMMM!
Lisad, try No Pudge brand brownie mixes.  They're super good and no fat.  They're sugary, but it sounds like diet soda brownies don't work.

I am SO going to have to try this.  I've been craving a cake of some sort for a while now.
I made cupcakes yesterday, Devils Food & Rootbeer.  I thought it would taste like rootbeer, but instead it just tasted like the most amazing cupcakes ever!!!

oh you people! b/c of this post, I was up at 6:30 this morning (my day off), baking pineapple diet cream soda cupcakes.

Horrid!

(they are delish but 90 cal or so a piece is still a lot for the um 4 I have eaten :-p)

the cup cakes are REALLY MOIST....almost to moist... are they stuppose to be like that? they are delish but just really moist...anyone know what to do about that?
