| Poaching Chicken? | ||
| May 19 2008 22:37 | ||
I love poaching chicken; I think it keeps the moisture in much better than grilling or frying. Is there anything else I can poach chicken in besides water? I've heard people on here mention salsa, but I don't particularly like salsa.... Any other recommendations? |

broth works well or I like to add lemon slices and some herbs to the water to give the chicken a little more flavor. |

Try doing it in seasoned chicken bouillion. Add fresh herbs for extra flavor. |

what I do is season it up and "fry" it in my non stick with some cooking spray...it seals the spices in...after both sides are browned a bit, I then add some water and cover it...it cooks up really tender but very flavorful! and get a yummy carmel color too since the water gets what was "burned" on the pan. |

Original Post by shinybiscuit: I was going to suggest pesto and low sodium chicken broth (which is also very good), but I bet the milk makes it a wonderful creamy pesto sauce to put over some whole wheat pasta - thanks for the idea! Also, any kind of low fat vinaigrette dressing will work - I tried balsamic vinaigrette diluted with a little bit of chicken broth, and it turned out fabulous. |

I really like it with citrus slices and fresh cut veggies...I do the oven foil packets. |

You're welcome! I think it's best with green pesto, but my housemate uses the tomato stuff. |

| you know what's good about using broth is, the broth flavors the chicken and in turn is converted to super chickeny chicken broth and you can use it in something else. | ||
