So, having been away at college for the past 8 months, I was pretty darn excited to attack my Trader Joe's here at home, now that I'm back for the summer. Maybe others have already discovered this, but I picked up the Black Bean and Corn Enchiladas, and sort of stashed them away for some night that I felt uninspired to cook. Anyway, I ended up trying them tonight... and can I just say: AMAZING!

130 cals per enchilada, so the entire package is 260. The sodium is slightly on the higher side, for what I like, but 460mg TOTAL isn't toooo bad, especially for a frozen food. The best part, is that they contain no artifical flavors, and no preservatives!
Anyway, I loved them. Just thought I'd share my joy! :)
Those do sound great but I've never seen them in the TJ's by me! :(. So sad.
Now i'm not too sure...
skinnyogi -- really?! Too bad! :-\ You should definately request them, if you can!
shandykat -- To be honest, I didn't know about the tofu and zucchini until I bit into them, either! The tofu was in little teeeeeeny tiny cubes, as was the zucchini. I really didn't notice them; I thought it was a really great blend. I suppose it was different than your standard enchilada, and the sauce IS thick, and different than "normal" enchilada sauce... but I loved it! The sauce reminded me a lot like the sauce used to make tamales (I'm half-guatemalan, so...yeah, haha), and the overall flavor of everything really worked for me. I'd give them a shot, but I guess just don't psych yourself up for some enchilada you'd get at a mexican restaurant...
I can tell I will be spending a long time in there browsing everything.
rmgarcia I'm totally going to call them and ask that they stock them haha. They sound really similar to the Amy's enchiladas but are probably cheaper (and lower in cals!).
have you tried the veggie egg rolls? They are amazing... ! 110 calories a piece and a decent amount of good stuff.. only thing that sucks is that you have to bake them.. my b/f attempted the microwave and he said they were soggy :(
omg, my wife and I love Trader Joe's and there are none in Texas! Texas is not even in their 5 year plan. Every time I visit family or am on a business trip where they are located I go nuts buying... well raw nuts and other things that I can carry back on a plane! I just returned from Pt. Mugu, CA and brought 8 lbs of nuts back. I couldn't bring the chicken wraps, thai noodle salad, roasted garlic hummus, low fat greek salad, southwestern salad, or low fat cucumber dill dip because I ate them all in the two 1/2 days I was gone! I ate Joe's for three dinners and two lunches! Still lost weight while on the trip too! And boy was it in expensive! You can't beat them for quality or price. Our local Central Market & Whole Foods don't even come close on quality and price!
The good news is that my son is moving to the Atlanta, GA area, with my grandkids, and there are 6 TJ's in the area! So even if we don't relocate back to Atl we'll be there enough to stock up on what we can carry on a plane!
I just got transferred to a new office, and it's a block from the only TJ's in Pittsburgh. I jumped up and down when I found out :) Ingredient labels where you can recognize everything in them, pre-packaged food that isn't outrageously caloric or nutritionally deficient... in fact, my hubby is thinking about getting a job there, because the people who work there always seem so happy to be there :)
j-snyder, I totally agree. I always check the labels still, mainly for nutritional content, but it's sooo nice when it just says, smack-dab in the middle, NO ARTIFICIAL FLAVORS OR PRESERVATIVES, haha!
To those of you without TJ's in the vicinity... I'm so sorry! I have one like, just down the street from me. Maybe a 6 minute drive. For years, it was just a great place to go, then suddenly it seemed, I kept hearing about people (friends of the family, etc) who live super far away and come drive all the way here just for to stock up at Trader Joe's! I'm so lucky when I'm at home, but when I'm away at school, the nearest one is about 300 miles away! :(
TJs does=amazing! I just got these soy nuggets they're like chicken nuggets and are delicious! Even my bf who hates soy anything LOVES them. We have about 6 TJs within a 20 mile radius of us, the farthest being san fran (about 20 miles) lucky us! ... Gotta love the Bay Area for that much!!!
I believe those enchiladas are Amy's, made by them but packaged as Trader Joe's brand, same with some of their frozen pizzas. Of course, the TJ ones are much cheaper. I got a frozen roasted veggie pizza at TJ's for $4.59 and then saw the Amy's one at Whole Foods for $6.99!
