I love Salsa, and its low in cal.  Does anyone have ideas of what to do with salsa besdies the obvious, like as a dressing on tacos and nachos.

Thanks!

I quite enjoy salsa as a salad dressing, and I love Spanish rice which uses salsa in place of the water for cooking the rice.

i put salsa on eggs or omlettes.. i also make fresh salsas like black bean and corn or pineapple mango and put over fresh fish like salmon or tilapia!

I 2nd the salsa with eggs idea - very yummy - as well as over fish or even chicken.  Mango or pineapple salsa over fish/chicken is so tasty!

I also use it as a veggie dip when I get bored with my hummus and need to shake things up a bit!

I have several recipes that call for salsa and picante sauce in place of tomato sauce.  The one that we like the most uses salsa and mexican blend shredded cheese - YUM!  Put it in your meatloaf.  Just about anything that doesn't have a lot of seasonings and calls for tomato sauce you can use salsa instead.  Some spices it just doesn't mix with, though, so be careful if there are a lot of other ingredients.

I use it on eggs (egg beaters) to add some flavor, it is good wrapped in a low carb tortilla.

One thing I have been eating lately (and getting the "you're insane" look from my boyfriend) is about 1/2 cup of sliced potatoes I've cooked in a little bit of butter with garlic salt (served hot) topped with 1/2 cup cottage cheese and then 1/4 cup or so of salsa on top. I tried it one day when I was trying to figure out what I wanted with some cottage cheese, but I swear it's good.

Also, it's good used as a pasta sauce in a Mexican-themed pasta dish. I used to cook spaghetti, top with salsa and add in corn, black beans, olives - whatever Mexican-type things you like.

I used to love cheese and salsa sandwhiches, allthough they are not very low fat/cal!

I love dipping carrots in salsa.  I also like to take hard boiled eggs, scoop out the yolk, fill the cavity with salsa, and eat it like that.  Full of protein and delicious.

Take chicken and cover it with some salsa and a little shredded cheese and bake it in the oven.  Then serve it with some black beans.  I also like adding alsa to eggs.  It makes a super tasty burrito.

I like salsa on rye bread toast.

It's also good as a dip for mixed vegetables.

I buy ALL TYPES of salsa (with olives or artichokes or eggplant or ANYTHING (except fruit ones - cause I don't eat fruit) & I top Chicken or White Fish with them & Bake away! I cannot stomach raw onions very well but if I cook the salsa it works perfectly!

Try mixing salsa and nonfat sour cream to make a dip!  Salsa and eggs are yummo.  Salsa as a salad dressing is yummo too.

I did a search on allrecipes.com for the ingredient salsa and found this list. Some of them look good! Like the Salsa Biscuit Chicken! But that one is a million calories. haha But it's still an idea. Bake some chicken breasts with salsa smothing them?  (Edit: Ah ha!  Other people suggested that!  I should have read first before posting...)

And now I will tell you my absolute all time favorite ... it's a recipe I submitted to the allrecipes.com and is posted here:

very good on a baked potato, and also very good on a stir-fry (if it has cilantro). i also like to eat it on spaghetti squash.

We top our cottage cheese with salsa then eat  it with chips to get the added protein in...

Also, if you like cilantro.. You can sautee some chicken (or use natural already cooked chicken breast) , some zuccini, and 1/2 cup cilantro and 1 cup salsa.. Add a bit of mozzarella cheese and you have a nice quick, healthy dinner....

try it on a veggie burger or a portabella mushroom. maybe with some cheese...

#19 misty1993 May 15 2008 14:43

I use it on in place of ketchup on a turkey dog or burger with pepper jack cheese and onions...yummy!

I love homeade salsa. Here is a great recapie.

1 cup packed coarsely chopped cilantro

2 cloves of garlic

1/2 onion coarsely chopped

1 jalapeno chile, halved lengthwise

2 1/2 lbs ripe tomatoes cored and quartered

juice of 1 lime

salt

It makes about 5 cups so I freeze it and use it on chicken, fish, salads, and my favorite is to scramble egg whites and mix it in yum yum.
