| What to put on my salad...hmm... | ||

Right now, I'm planning lunch for tomorrow, and I'm planning on having a salad. I've never been real big on salads, but I want to acquire a taste for them. So, all I can think of is baby spinach and lemon juice...pretty plain. I could add cherry tomatoes, carrots, or light/fat free cheese, but it would still be pretty plain. I guess I could replace the lemon juice with a light balsamic vinaigrette or Italian dressing to give myself more calories...but still. Do you have any ideas? What do you put on YOUR salad? |

Avocado, roasted red peppers, seeds and/or nuts, a sprinkling of Chinese fried noodles, mushrooms, artichoke hearts, bleu cheese crumbles, flaked fish (such as blackfin shark), quartered quail eggs, alfalfa sprouts, radish sprouts and/or radishes, red bell pepper, orange bell pepper, yellow bell pepper, summer squash, jicama, pepporcini, olives, looseleaf lettuces, dandelion leaves--any or all of these things can wake up a salad. I always prefer my salad 'too' busy than too bland. :) |

Here is a salad I love and only have as a complete meal. Mixed springs and spinach; 81 grams grilled chicken; 15 grams of chopped roasted macadamian nuts; 121 grams of grilled pineapple chunks; 14 grams of shredded parmesam cheese; topped with 30 grams of Ken's Litehouse Honey Mustard Dressing. I measure everything, so I use grams, it's easier than ounces on the scale. In a bowl, lay out the mixed greens; then in a skillet roast the nuts, then place on greens. Now add the chicken, once cooked place on greens. While the skillet is still hot, place the pineapple in, turn off the heat and cover until fruit is warmed; place on top of chicken. Sprinkle with cheese and dressing. For the chicken, I use the pre-cooked packaged chicken. Total calories is 405 and it's very filling. (I always use a large bowl, and place a lot of greens first.) It is awesome! It will knock anyone's socks off. |

| I always make a spinach-feta-tomato salad and add whatever other veggies I have around, broccoli/cauliflower, etc. Then I toss on a can of beans, grilled chicken or some tuna. Avocados and olives are good too :) Use sun dried tomatoes if you dont have fresh- those are awesome too. Oil and vinegar dressing is best b/c it goes with anything ;) | ||

| Spinach, iceberg and romaine lettuce, broccoli florets, cauliflower florets, mushrooms, tomato, carrots, sliced onion, cucumber, bell pepper. For protein I add chicken, chicken of the sea salmon packets, or i will cook about 1/3 of egg whites. Grilled veggies are also great. I like to cut zucchini or squash into slices and grill on my george foreman. The same with red onion. | ||

dried cranberries and some type of nut, pecan, walnut, almond, etc. I love the sweet that the cranberry adds. |

I like a little zing in my salad so I always add hot pepper rings. They are low in calories but big on taste. I also add beets sometimes...carrots, cucumbers, broccoli, green or red peppers - grilled chicken breast is also a good source of protein with not a lot of calories that goes great in salad. |

I like spinach w/some dried cranberries and crumbled blue cheese and some sunflower seeds. it's also good w/some mandarin orange segments and fat-free honey mustard dressing and sunflower seed |

My trainer suggested olives. They are fairly low in calories and give me the salt flavor without tons of the salt that i crave!! They add alot of flavor. Also, if you like the salty sweet combo....i sprinkle a few sunflower seeds and a few raisins. I always put chopped egg. If you want cheese, use feta or parmesan, a little goes a long way!! |
