I have lots of recipes and lots of ideas for meals.. but they all seem
to have a lot of calories! All my old favourites... nixed. :) Ok,
not ALL of them but roasted vegetables are totally out...

chickpea/cumin burger, with a big slice of grilled eggplant, tabbouli and salad on a wholemeal bun.
Last night I had Crab stuffed portebella mushroom with baked asparagus and brown rice.
Tonite I have had four chicken drummetts hot wing style. I know not good but if you read my diet log you will see I have not had time or desire for much of dinner just yet.

I do not think that is veggie ismile :-) I cheated had an Amy's low sodium brown rice and veggie bowl along with some steamed spinach, purple cauliflower, and snap peas. Had some fruit for desert. Sorry very boring, no exciting recipes here.
I had potatoes au gratin, soydelicious icecream for dessert and tea.

I had a huge bowl of soba noodle soup. I made the broth with low sodium bouillion and added just a few drops of low sodium soy sauce and 1/8 tsp of sesame oil. I put in grated ginger, garlic, baby bok choy and scallions. I really should have added a little carrot for color. Those little bundles of soba are about 2 1/2 ounces dry, and it's fewer calories than an equal amount of pasta. I usually put some tofu in this soup, but I'm out. Also, I usually make my own vegetable stock. I must be getting lazy!

You know what I appreciate about vegetarians, its the simple things that matter. A steamed veggie for dinner, and fruit for dessert, can't get more simple, and yummy than that. As a veggie you learn to appreciate a vegetable for it's own taste without all the "stuff".

I broiled zucchini which had a dry rub of garlic, ginger, paprika, and basil, grilled corn on the cob, and steamed some asparagus from my garden and seasoned it with garlic, chili powder, red pepper, and some salt.
Then for dessert I toasted a piece of whole wheat bread and put some peanut butter and jelly on it.
I know a wondrous amount of vegetarian recipes if anyone is interested.

Didi Edmonds has a cookbook that is vegetarian, the recipies are do-able by the average cook, it is organized into meals, and everything I have made out of it tastes good....

lol-I had a big plate of salad and a baked potato...because my mother in law overcooked the pork and it was more suitable as a doorstop than dinner.
but even if she hadn't, most of my meals are more veggies than anything else anyway. I like meat, but mostly fish and chicken. and even then in moderation.

I had red lentils, yummy! I cook red lentils with vegetable broth (my favorite comes in a jar as a concentrate, Better Than Bouillone, or however you spell that word) and chopped carrots. I add various curries to this and cook it for several hours. You have to be careful that it doesn't dry out. I can make it thinner for soup or really thick so that it replaces hummus. I spread it on a wrap and add chopped raw cabbage. So tasty and no fat. This always goes over great at pot-lucks.

Last night I made a stir fry out of mushrooms, spinach (yes! it kinda
works!), beansprouts and babycorn. That with some brown rice. Oh, feel
the health.

I had home-made gnocchi with a home-made tomato, onion & garlic sauce, with a grilled chopped up Quorn (*soy protein) burger on top and a load of steamed green beans. Yum.
I'm not a vegetarian, but I was brought up one, and 9 times outta 10 I eat vege cos I like it better!

Oh, but I don't want to think about that! Quorn is delicious, and it seems to be the only thing to keep the carnivore mister happy.

I read a bit of stuff about Quorn before eating it, but I'm not particularly allergic to things in general, so gave it a go.
And I gotta say, I'd rather take my chances with mould than most of the meat on sale these days. It's a real shame it's causing bad reactions in some people.

well its a bit boring but i had a quorn garlic and herb fillet and new potatoes with carrots and peas! lol .............. well u did want to kinow!
Last night...original garden burger, loaded with pickles and tomato, steamed spinach, watermelon, and a carrot.
