Okay, so lately I've been obsessing over oatmeal.  I know, weird, especially in the summer.  But I don' t know, I just love it lately!  I'm having it twice a day..is that a little ridiculous?  And will it effect my weight loss?  It's good for you, but all those carbs!

I have been eating oatmeal twice a day all the way through my weight loss and have lost about 50 lbs...I don't think it'll have an impact on anything.  I would have a bowl for breakfast and also a bowl for dinner (instead of rice or potatoes or whatever other carb)

I started eating oatmeal this past winter and stuck to it through the warmer weather of the spring and summer. It's fast, filling, and healthy -- you can't go wrong!

Oatmeal is AWESOME. Complex carbs like oatmeal are good for you. It's got tons of fiber and protein, and it expands in your stomach. I find it MUCH more filling than rice or pasta, and there are SO many things you can do with it! You can try searching on CC. Oatmeal seems to be one of the top favorites along with PB.

Try steel cut oats - even yummier, although they take longer to make. Good fiber.

Yeah, steel cut oats are much better for you too.

I think oatmeal is great too.  If anything it's supposed to help lower your cholesterol.  I've been trying really hard not to put sugar in mine.  Usually I put in a serving of raisins or cut up a banana in it.

i've never used steel cut oats though -does anyone know a nice, easy, relatively quick, low cal way to prepare steel cut oats?

To cook steel cut oats:

You can boil the water, add the oats, and let them simmer for about 30 minutes (uncovered), stirring every few minutes.

or

You can boil the water the night before, add the oats, turn off the stove, and let sit over night (covered). When you get up in the morning, turn the stove on for about 7 minutes to get it warm, and then serve.

I eat mine with about a teaspoon of brown sugar and all the cinnamon I want. Some people add peanut butter or raisins. If it is too dry, you could add milk, but I never need it.

sounds yummy! i'll have to try both methods and decide which my palate likes most.

 

for a single serving of steel cut oats - is the ratio 1 cup of water for every 1 cup of oats?

No - but the box will tell you the correct ratio for a serving.

its usually 1/4 cup steel cut oats to 1 cup water

I ate a ton of oatmeal and cereal today for some reason. I had 5 ready to eat packets of oatmeal and a little over 2 cups of corn flakes. Mmmm....yummy!

I mix Steel cut oats (30% volume) with organic oatmeal (NEVER use 'quick' oats) in a container for use.  Quick oats are rolled - milled flatter & lose their texture, simmer time is BETTER!

You can microwave for cooking without watching a pot!  Key is don't boil the mixture, makes it slmy.  I get water + raisins/nuts, VERY HOT alone, 5-6 mins, THEN add cereal mix & cook <60-90 secs at a time & stir.  Let stand couple mins between each cooking (repeat 2-3x).   As a variation I sometimes add 20-25% white grits or polenta (yellow corn, coarse grind) & other dried fruit: dates, figs, apricots, etc + nuts chopped.

Let set about 10-15 mins while you shower or whatever - no watching to prevent sticking.  Trial & error on water qty, use pkg as a guide.  Yields a slightly crunchy texture, much more pleasant for me.  ENJOY!
