This is what i do to drumsticks (juiciest part of chicken in my opinion)

1) put cuts in the thickets parts -- u can skip, its just for the marinade to work better

2) add marinade. Sometimes I use bbq sauce. Other times I use rosemary, garlic, lemon juice, salt sugar, pepper. Sometimes I use greek salad dressing. Etc. Just find stuff u like.

3) let it marinade overnight and then for dinner the next day, pop in the oven at 350 C for about 1/2 hour, til cooked.

If you do this to chicken breasts, make sure u leave the skin on... otherwise it gets dried out in my opinion. Then once it cools, you can incorprate it in wraps, salads, etc.

Cut it up and make a pita / sandwich with veggis and balsamic vinegarette

Buy some McCormick seasoning salts, - I like "Monterey Chicken" or "Garlic and Herb" or "Lemon Pepper" and grill it.

Add some "Liquid Smoke", a little salt and pepper and grill or pan fry it

Slice a hole in the side of the breast and hollow out the center with the knife, throw in some veggies (I like spinach and mushrooms or peppers and onions or a slice of tomato) and an ounce of cheese and bake it (wrapped in foil).

Slice it up, top it with salsa and avacado and wrap it in a soft corn tortilla

Dice it up and toss it on top of a salad (obviously)  HAHA

Make a soup with it - Chicken, veggis and rice (for example) - You can get good recipes at www.recipezaar.com

Hope I helped a little!

My friend posted this site in her journal and I thought I'd pass it on...

Poach it in salsa, in a saute pan with a lid, on top of the stove.  No fancy cooking involved and just the two ingredients

Quick Chicken and Rice

Season enough chicken for 4 servings.  Brown the chicken in a non stick saute pan.  Pour in 2 cups of chicken broth, a few sliced garlic cloves, some freshly minced parsley and a dash of cumin.  Bring to a boil.  Stir in 1 cup of rice, bring back to the boil, reduce heat, cover and simmer for 20 minutes.  It turns out perfect.

You can add diced red bell peppers, onions and chopped celery, to the broth and rice if you want.

Hello,

Chicken on the BBQ is always good! Why do you eat chicken everyday? Would you consider trying other lean protein choices? Fish, pork, lean beef cuts, Tofu? Just a thought.....

I really like the lawry's marinades, there are a lot of different flavors. There great with boneless skinless chicken breast, keeps it moist. I cook them on the grill, when done I slice them and added them to a salad ro just eat them with some other type of side dish. Say teriyaki with rice and vegetable stir fry. Herb and Garlic with whole grain pasta tossed with some pesto, etc. It's all up to your taste. Also boneless skinless chicken thighs work well if you prefer dark meat.

get a slow cooker if you don't have one. chicken breasts cooked and pulled apart, with a little bit of BBQ sauce, Yummmmm!!

I like to throw some tenders in the crock pot in the morning with a jar of salsa and a can of corn.  i keep it on low all day and when i get home it's nice and ready for me.

Nothing could be easier than that!!
