| Yummy low-cal breakfast! | ||

So usually, I wake up hungry and have a craving one way or another as to what I'd like for breakfast ... this morning, it was nectarines and peanut butter. Hmm... So I took 2 slices of Sara Lee Delightful Whole Wheat with Honey (90 cals - 2 slices), plus 2 TBS of Skippy Reduced Fat Peanut Butter (180 cals), and one medium-sized nectarine (69 cals) and made something that turned out to be fan-friggin'-tastic and is super easy if you've got a toaster oven (or if you don't mind toasting in the oven). Toast the bread lightly, put a TBS peanut butter on each slice, then slice the nectarine in 1/8" or 1/4" slices and lay them in a single layer on top of the PB'ed toast. Pop back into the toaster oven until the edges of the bread get really toasty & the nectarines are hot. Enjoy! I eat about 1350 cals per day, so this (at 339 cals) plus some coffee with Stevia, turned out to be a perfect weekend breakfast for me as it give me lots of fiber & protein - very satisfying. It was SO dang tasty! |
