putting foods together u never thought before

I love when I come up with a healthy dish. I'm hispanic so I was raised eating very high caloric meals like rice and beans everyday along with meat and fried plantains. So these are the foods that I love, that remind me of home so I love having them all the time except that it doesn't work really well with my new calorie budget. Well, today I was craving for some plantain. Usually, when we cook plantains back home we either fry it or boil it and have with either fried cheese or fried salami or scrambled eggs so I decided that i would just boil the plantain and have it with half a can of sardine, all smush together with romaine lettuce, garlic and spices and it was absolutely delicious!!! I liked it soo much that I'm planing to make it a regular and it is under 300 calories!

Any meals you guys have put together and ended up being delicious?

I have been making alot of stirfry dinners lately after the gym because they are quick and easy. So I started incorporating whatever what in the fridge. For instance last night I have a stirfry with shrimp, french cut green beans, onion, squash, and chopped up peaches. I tossed so seasoning and soy sauce in there as well and it was so delicious, the peach was so sweet while everything else was savory. Ive done the same thing with Pineapple and Pears. I highly recommend incorporating fruit into dinners :)

If you like stir fry, you have to try the Noh sauce packets.  It's dried seasonings for everything from Korean BBQ to Lemon Chicken.  YUMMMMMM!!!!

Baked potato with roasted red pepper hummus. I have veggies on the side too but TRUST ME this is amazing.

Gnocchi and tuna lol. Wow even typing it out it sounds gross, but I like it.

However, I also like toast with peanut butter and cheese, so there you go.....

The potato and hummus idea sounds awesome. I'm gonna try that. I think potato and guacamole would be good too. So much better then laying on the sour cream, bacon bits, and cheese lol.

I was scrounging for lunch at work last week and ended up with tuna, some ak mak crackers and an apple.....the tuna and apple were great together!  I'm thinking I'm going to put some grated apple in my next batch of tuna salad.

 I always put apple in my tuna salad... and 1 boiled egg, diced carrot, pickle relish or diced pickles, a little mustard, dill weed ... all together at once.  Yum!

Also good in tuna salad is jicama, carrot, tomato, cilantro and lime juice.

Baked potato with salsa! 

I love trying different crunchy bits in my yogurt... lately I'm in love with caramel rice cakes broken up in my banana cream yogurt. So yummy and less than 200 calories. My favorite breakfast!
