| Freezing fresh, pre-cut bags of veggies? | ||

Has anyone tried freezing those bags of fresh, pre-cut or pre-mixed veggies for later use? I like to buy the bags of broccoli crowns, carrots/cauliflower/broccoli mix, cauliflower cuts, etc from Trader Joes. I hate having to go to the store more than once a week, but if I buy a variety or buy too much I end up losing half of it to rot! So, I'm thinkin' it'd be a good idea to pop them into the freezer and use as I want. I just don't know what freezing will do to those fresh little veggies. Anyone out there done this or have advice? I have a garden and often freeze veggies from the garden. You can freeze most veggies, but you need to blanch them first for quality. To blanch, boil some water, drop in the water for 2-3 minutes, remove and drain, then drop into ice water to stop the cooking. Freeze immediately in freezer bags. Once the veggies are frozen, you can use them in soups, stews, casseroles or steamed. The texture won't be good for salads or raw. The reason for blanching: Blanching stops the enzymes in the raw veggies from deteriorating over time. It also helps the texture upon use. |
