You can use fresh or frozen spinach for this recipe. Chopped frozen spinach will save some time preparing this dish, however the quiche will not be as bright green as It gets with fresh spinach leaves.
You may replace the ham with 1/2 cup of bacon bits which will increase the fact content a lot but the flavour will be absolutely delish!
